Sand all wood and just seal it so it stays pale, use pastel colours for paint and then something darker for upholstery and curtains, like I medium plum colour, not battleship grey

I'm kind of leaning to a Grey/Lime Green interior
If you paint the interior of a small space like your caravan in those colours, the only thing you'll be leaning towards will be a bucket.

I know it sounds harsh but I do a lot of painting and decorating. Those are two colours I wouldn't recommend in a small space.
Light ceiling and walls, get your colour from the cushions and curtains.
Have at it bloke, your choice in the end.
