Talking Steak

I only eat fillet steak at Christmas instead of Turkey and sometimes when I am on holiday.

It has to be an Angus Fillet Steak two inches thick with a nice pink colour and a run of blood when you cut through it. It does not need chewing as it virtually melts in your mouth as you consume it.

Steak needs to be kept in the fridge for at least three days before its cooked to give it time to mature a little.

Yum yum !

Anything other than rare and your a wuss !

A bleu steak is really nice but to be honest it usually is served on your plate lukewarm and I like mine heated through. 3 minutes on each side is usually about right with some fresh garlic clove sliced inserted through the sidewall.

I know the maggots are a bit of a put off but if you hang game with the innards intact and wait about 5 days until its ripe it does taste much nicer !!
