Default Biltong anyone?

anyone on here made their own biltong?
my wife and i have and it came out gorgeous.
Just built a larger biltong box and will be starting some more tomorrow.

Any one got their own tried and tested recipe?
Any hints or tips????

Soy sauce and chilli is a good combination?

I sometimes make it with the venison I shoot . . . .best tip I can offer is to use only the best cuts, and use Cure2 in your mix (as per instructions for the weight of meat) Don't pay any attention to anyone who says nitrates are bad for you, and use it! It may just save your life by preventing botulism. It's very rare, but I won't make biltong without it

It's a dried meat snack.

Imagine the sole of your crustiest work boot, and then remove all moisture.

Ta-da !
