Incidentally, Alex, do you have a number plate light following on from your bumper removal.

Only, local Plod could add that to the list of things they can get you on.

They could complete their monthly motoring conviction target with just one vehicle stop.

Front bumper non compliant
Rear bumper non compliant
Exhaust not complete, not allowing exhaust fumes to be taken away from the cab area.
Excess exhaust noise.
Possible number plate illumination issue. unsure?
Any cuts or damage to the tyres could add to the list too. unsure?

So what's that these days... three points per violation...

They might think that as the mods were fitted after the previous MOT, that the MOT is no longer valid, they might then send it for a thorough vehicle inspection. And it won't be any spotty teenager doing this one...
It will be a team, each with their own speciality.

So how does the insurance work...? No MOT = no insurance... hmmm..
Is that another 6 points waiting to be added on at a later time ?

One of the above issues, and you might be lucky to just get a note to say, sort it in two weeks or else.

Two or more... you could be walking.

Don't forget, if they have grounds to stop you to ask about anything, then out comes the breathalyser too. But from what I have read, you appear to be sensible in that area... I think..

I have my "Uncle's hat" on again, looking at safety and liability to both you, your family and other road users.

Incidentally, I am not against modding vehicles, if properly done and the insurance company informed in detail of course.
Now, to my insurance company, my vehicle is heavily modded too, such that I couldn't get it insured by "Saga"

Here are the mods, added after original purchase.
Tow bar
Reversing sensors
Second battery
Wider tyres than originally fitted.

Any one of the above stops me having Saga insurance.
Although I assume they allow some tow bars on some vehicles
