I did mine for tools and offroading gear but could easily have been set higher to allow storage underneath.
Go for a metal support rail (like your rooff racks) and bolt them to the side of the truck. Then put some ply ( much stronger than mdf) on the rails, simples Here you can see my alu rail along the side |

Don't know how this would affect the strength though I bet this has got you thinking.... best regards, Rustic edit, what you could do... is have a trailer, with high sides, maybe windows, with a door, table, bed, loo, all with standing head room, battery, water, sink, cooker, heating, fridge...even a shower, hot water, even electric hook up. Corner steadies. Oh and maybe you could find something like, this pre made using modern lightweight materials. That way you won't need to convert the car each time, and you can just hitch it up. If you look carefully on the motorways in the summer, you often see box like structures like this being towed behind all types of car. There are also special sites where you can put them too. Our boat has all these facilities, and I wouldn't rough it again. But Hey Ho... you are still young, comfort comes later in life. I still like your project though... Good luck with it. .

got my new roof lining back in today, also fitted a light unit from a honda jazz in the back, came from the same jazz im going to get parts off for ours
